Apropos svovl, så fik jeg denne mail i dag fra en leverandør:
"Here are some news from the Chateau ....... We have initiated the harvest of the whites Wednesday morning, early morning to harvest fresh cold grape. 2015 is very mature and the quality of the grape is outstanding! No doubt 2015 is a great year. It took us 3 hours to harvest the parcel thanks to the help of our young harvester (see pics), once harvested the grape in cagettes of 25 kilos is taken to our cuverie where we proceed with smooth crushing and press very slowly and progressively, the juice is maintained in cold temperature in our Egg vats for 24 hours then we store the juice in our 300 liters barrels for fermentation. No sulfites are added, we now use a substitution based on crushed grape seeds. "
