Godt, jeg tog fejl! Her står den på konens yndlingsspise, sushi. Bl.a. med sorthummer.

Kan en champagne ikke altid bedre følge med syltede hypen end en fed/sød foie gras ?

Det kommer nok an på proportionerne. En kæmpe luns foie gras vil være "problematisk", men champagne og foie gras har trods alt noget umami-karakter til fælles.

Hmmm... Umami tilfælles ? Måske jeg bare drikker for meget Non-Dosage.

Jeg tænker på smagen af autolyse (bærmekontakt),, som jo hverken er sur, salt, sød eller bitter. Mener at have læst et sted, at umamismag dannes, når gær nedbrydes. Der er også nogen der bruger gærekstrakt som umamikrydderi.

Men hvad fanden har det med Foie Gras at gøre ? Det er jo super sødt/fedt..

Foie har vel også noget smag af det, englænderne kalder savoury - og som bl.a. forbindes med indmad og vildt.

Umami er svært at definere. Det er måske netop definitionen. Lidt lige som mineralitet i vin.

savoury bruges det ikke som det modsatte af sweet? I hvert fald i kokkeprogrammer. Der bruges det om et køkken der ikke er et dessertkøkken. "bla bla so brave to use vanilla in the savoury kitchen bla bla"
